Avocado Salad Benefits

Avocado is also on the list of healthy fruits, yes it is a fruit. Alpha-linolenic acid (an omega-3 fatty acid) and oleic acid are essential fats provided by avocado. Avocados are an excellent source of pantothenic acid, dietary fiber, vitamin K, copper, folate, vitamin B6, potassium, vitamin E, and vitamin C.
Tomatoes are also an excellent source vitamin C, biotin, molybdenum, and vitamin K. They are also an excellent source of copper, potassium, manganese, dietary fiber, vitamin A (in the form of beta-carotene), vitamin B6, folate, niacin, vitamin E, and phosphorus.

Salad Ingredients
1 lb Roma tomatoes
1 English cucumber
1/2 medium red onion, sliced (optional)
Two avocados, diced
2 Tbsp extra-virgin olive oil or sunflower oil
Juice of 1 medium lemon (about 2 Tbsp)
1/4 cup (1/2 bunch) cilantro, chopped*
One tsp sea salt or 3/4 tsp table salt
1/8 tsp rainbow pepper
*Note: if you aren’t keen on cilantro, fresh dill is a good substitute
Directions:
- Place sliced cucumber, tomatoes, avocados, and cilantro in a large salad bowl.
- Drizzle with 2 Tbsp olive oil and 2 Tbsp lemon juice.
- Toss gently to combine.
- Just before serving toss with one tsp sea salt and 1/8 tsp rainbow pepper
